Turmeric Coconut Chicken with Cauliflower Rice
A creamy, anti-inflammatory chicken dish cooked in healing spices and coconut milk, served over gut-friendly cauliflower rice.

Ingredients
2 organic chicken breasts, diced;
1 cup full-fat coconut milk;
1 tbsp coconut oil;
1 tsp turmeric powder;
1/2 tsp cumin powder;
1/2 tsp coriander powder;
1 tsp fresh grated ginger;
2 cloves garlic, minced;
1/4 tsp Himalayan salt;
1/4 tsp black pepper;
1 tbsp lemon juice;
1 cup cauliflower rice;
1 tbsp fresh cilantro, chopped;
1 lime;
Directions
Heat coconut oil in a pan over medium heat;
Add diced chicken and cook until lightly browned, about 5 minutes;
Add garlic, ginger, turmeric, cumin, and coriander, stirring for 1 minute until fragrant;
Pour in coconut milk, salt, and black pepper, then reduce heat and let simmer for 10 minutes;
While chicken simmers, steam or sauté cauliflower rice for 3-4 minutes until tender;
Stir lemon juice into the chicken mixture, then remove from heat;
Blend the cauliflower into a rice consistency;
Serve chicken over cauliflower rice and garnish with fresh cilantro and lime;
