Ingredients

450g Beef Stew Meat, cut into cubes;
1 large Onion, finely chopped;
3 cloves Garlic, minced;
1 tbsp Fresh Ginger, grated;
400ml Coconut Milk;
240ml Beef Broth (no additives);
2 tbsp Coconut Oil;
2 tbsp Curry Powder (ensure it's additive-free);
1 tsp Ground Turmeric;
1 tsp Ground Cumin;
1 tsp Ground Coriander;
1/2 tsp Ground Cinnamon;
1/4 tsp Ground Cloves;
1/4 tsp Cayenne Pepper (optional);
2 large Tomatoes, chopped;
2 cups Fresh Spinach, roughly chopped;
Sea Salt and Black Pepper to taste;
Fresh Cilantro for garnish;

Heat the coconut oil in a large pot over medium-high heat. Add the beef cubes and brown them on all sides. Remove the beef and set aside.;
In the same pot, add the chopped onion and cook until softened. Add the garlic and ginger, cooking until fragrant.;
Stir in the curry powder, turmeric, cumin, coriander, cinnamon, cloves, and cayenne pepper (if using). Cook the spices for 1-2 minutes to release their flavors.;
Add the chopped tomatoes and cook until they start to break down. Return the browned beef to the pot.;
Pour in the coconut milk and beef broth. Stir to combine and bring to a simmer. Reduce the heat to low, cover, and let it cook for about 1 hour or until the beef is tender.;
Add the chopped spinach and cook until wilted. Season with sea salt and black pepper to taste.;
Serve the curry hot, garnished with fresh cilantro. Enjoy.;
