Butter Chicken

A creamy and flavorful Indian dish with tender marinated chicken cooked in a rich tomato and cream sauce.

Ingredients

2 tbsp ghee or butter (or 1 tbsp olive oil);
1 cup tomato passata;
1 cup heavy cream;
1 1/4 tsp salt;

Marinade

  • 1/2 cup plain yoghurt, full fat;
  • 1 tbsp lemon juice;
  • 1 tsp turmeric powder;
  • 2 tsp garam masala;
  • 1/2 tsp chilli powder;
  • 1 tsp ground cumin;
  • 1 tbsp freshly grated ginger;
  • 2 cloves garlic, crushed;
  • 1.5 lb chicken thigh fillets, cut into bite-sized pieces;
  • Directions

    Combine all marinade ingredients and chicken - marinate for 3-24 hours.;
    Heat ghee in a pan, add chicken (keep marinade on), cook until white.;
    Add tomato passata, cream, salt, and remaining marinade. Simmer for 20 minutes.;
