2 Chicken Breasts, cooked and sliced;
4 cups Mixed Leaves (e.g., rocket, spinach, kale);
1 cup Cherry Tomatoes, halved;
1/2 Red Onion, thinly sliced;
1/2 Cucumber, thinly sliced;
1/4 cup Fresh Basil, chopped;
1/4 cup Extra Virgin Olive Oil;
2 tbsp Apple Cider Vinegar;
1 clove Garlic, minced;
Sea Salt and Black Pepper to taste;

In a large bowl, combine the mixed leaves, cherry tomatoes, red onion, cucumber, and fresh basil.;
In a small bowl, whisk together the extra virgin olive oil, apple cider vinegar, minced garlic, sea salt, and black pepper.;
Add the cooked and sliced chicken breasts to the salad.;
Drizzle the dressing over the salad and toss gently to combine.;
