Carrot Ginger Soup
A creamy and flavourful carrot ginger soup, perfect for a cleanse-friendly diet.

Ingredients
1 tbsp Coconut Oil;
1 large Onion, chopped;
4 cloves Garlic, minced;
2 tbsp Fresh Ginger, grated;
1 kg Carrots, peeled and chopped;
1.2 liters Vegetable Broth (no additives);
400ml Coconut Milk;
1 tsp Ground Turmeric;
Sea Salt and Black Pepper to taste;
Fresh Cilantro for garnish;
Directions
Heat the coconut oil in a large pot over medium heat. Add the chopped onion and cook until softened.;
Add the garlic and grated ginger, cooking until fragrant.;
Stir in the chopped carrots and ground turmeric. Cook for a few minutes, allowing the flavours to blend.;
Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer until the carrots are tender, about 20 minutes.;
Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.;
Stir in the coconut milk and season with sea salt and black pepper to taste.;
Serve hot, garnished with fresh cilantro. Enjoy.;
