1 small onion, diced;
2 cloves garlic, minced;
2 zucchinis, chopped;
1 1/2 cups bone broth (or vegetable broth);
1/2 tsp turmeric powder;
1/4 tsp ginger powder;
1/4 tsp Himalayan salt;
1/4 tsp black pepper;
1 tbsp fresh parsley, chopped;

Heat coconut oil in a pot over medium heat;
Sauté onion and garlic until translucent, about 3 minutes;
Add zucchini, turmeric, ginger, salt, and pepper, stirring for 1-2 minutes;
Pour in bone broth and bring to a gentle simmer for 15 minutes;
Blend soup until smooth, then stir in fresh parsley before serving;
