Coconut Apple Cake
A moist, cleanse-friendly cake featuring coconut flour and fresh apple slices with warm cinnamon spices.

Ingredients
4 large eggs;
1/2 cup monk fruit sweetener;
1 cup coconut flour;
2 tsp baking powder;
1x 400ml can coconut milk;
1 tsp cinnamon;
2-3 Granny Smith apples, peeled and thinly sliced;
A good sprinkle of cinnamon;
A squeeze of lemon juice;
Directions
Preheat the oven to 170°C (340°F);
Mix all cake batter ingredients together in a blender until well combined;
Pour the batter into a lined cake tin;
Peel and thinly slice the Granny Smith apples;
Toss apple slices with cinnamon and lemon juice;
Gently press the seasoned apple slices into the cake batter;
Bake for 20-25 minutes or until an inserted knife comes out clean;
Cool before serving and top with a dollop of coconut yogurt if desired;
