Cleanse Friendly Chocolate Cake
Super easy cleanse-friendly chocolate cake that takes about an hour from start to finish. Rich, moist, and naturally sweetened.

Ingredients
1/2 cup Coconut Flour;
2 tsp Baking Powder;
1/2 cup Cacao Powder;
4 Large Eggs;
1/2 cup Erythritol;
1 tsp Vanilla Essence;
13.5 oz Coconut Cream (1 can, 400ml);
Optional Ganache/Topping
2 tbsp Cacao Powder;
2 tbsp Coconut Oil;
1 tbsp Erythritol;
Desiccated Coconut for sprinkling;
Directions
Preheat oven to 170°C (340°F);
Grease a 9-inch round cake pan with coconut oil or butter and set aside;
In a medium-size mixing bowl, whisk together coconut flour, baking powder, and cacao powder, then set aside;
In another bowl, beat eggs with erythritol for 30 seconds using a manual whisk;
Pour the egg mixture onto the coconut flour and cacao blend;
Whisk in vanilla essence and coconut cream;
Stir until fully combined and a shiny cake batter forms with no lumps;
Transfer the cake batter to the prepared cake pan;
Bake for 50 minutes in the center of the oven;
Add a piece of foil on top after 30 minutes of baking to prevent burning;
Test doneness by inserting a skewer in the middle - it should come out clean;
Cool in the cake pan for 10 minutes, then release onto a cooling rack for at least 1 hour before serving;
