2 organic chicken thighs;
1 tbsp olive oil;
1 tsp dried oregano;
1/2 tsp thyme;
1/2 tsp Himalayan salt;
1/4 tsp black pepper;
1/2 tsp garlic powder;
1/2 tsp onion powder;
1 cup chopped zucchini;
1/2 cup cherry tomatoes;

Preheat oven to 200°C (400°F);
Rub chicken with olive oil, oregano, thyme, garlic powder, onion powder, salt, and pepper;
Place chicken on a baking sheet and roast for 25 minutes;
Add zucchini and cherry tomatoes to the baking sheet, drizzle with olive oil, and roast for another 10-15 minutes;
Serve hot;
